Non USA based email accounts...any advice?

I'm trying to stop using gmail for my email. A recent email from the sovereign man says gmail, yahoo, hotmail, or any other USA based email can be easily read by the US government. I also don't like the fact that google tracks your internet habits if you are signed into your gmail account while surfing. I decided to find a non USA based, or hosted email service. It has proven difficult. Even foreign systems usually has it's servers in the USA. If you download flagfox program for firefox browser, it will show you the flag of the country hosting the site, and almost all are USA based. I'm looking for a free foreign hosted email system that has English interface. So far I have found:

https://www.vmail.me/en/ server in France, domain in Montenegro
http://www.inbox.lv/index.php Latvia
http://www.contactoffice.com/ Belgium
http://www.rediff.com/ Indian, but hosted in Canada (in bed with USA)
https://www.hushmail.com/ UK (in bed with USA)

I think inbox.lv in latvia is the best one since it's such an obscure place and it has free 10GB storage!

Any body have any other suggestions? Anyone else doing the same thing as me, or has already done it?

The ultimate email looks like this one, but you have to pay:

The reason email accts are free in most cases is that the companies involved are getting something in exchange through contact with you.

At any rate, here are a few, not always free though..just cheap.
