I am working on my Associates degree in economics. I have heard that there is a strong need for business related degrees in China. My question is that, are economics degrees in demand? And what are the requirements for those jobs?

I'd recommend you research Chinese wages. They're not enough for foreigners to live on. Then you have to resaerch Chinese Working Visas - which are nothing short of a nightmare.
