That is stealing, and it is no way to live your life. I believe you reap what you sow. Some religions have ideas of karma or something like that, or what goes around comes around. Put them back on the shelf, leave with the portion you skimmed from them. Technically, it's not exactly stealing because you put the product back on the shelf and you're only taking some samples to try before buying it.

I've got a couple of pairs of pliers a guy I bought a used washing machine and his helper left at my house. I've tried to dig up what the address was to return them. I've got a floaty I accidentally took from a vacation rental that I need to return. I called the rental website company about what to do about it. They are supposed to follow up with me. I also accidentally left a girl's sock one of my girls had tried on out of a pack of uncomfortable socks that I need to remember to take back to Walmart, since I already returned the socks. Then there is the $9K+ an overseas employer over paid me a while back. I got a tax refund in that currency, and I just got the bank information to send it back, which took a while to get, and I can afford to do so without breaking the bank now. I think I'll add another cc to the email to verify that this is the right bank transfer info and send it on when I get the chance within a week or so.
I've got some investments that should hopefully liquidate with a profit. I suspect if I take care of my own debts that I mentioned, some of the money might start coming through. But if not....
But if not, it is still the right thing to do.
I try to take pens back if I accidentally take one for the bank that isn't offered from customers. I've got one to take back to church.
My advice is be conscientious about not stealing, even those little things you can do by mistake. Make it right. Even when I was poor, God took good care of me, and never let me be homeless. I've prayed for specific little things I needed, like a brand new pair of athletic shoes, or even just commented internally in prayer that I wished someone would give me $400, and someone gave me exactly $400 within a couple of hours or so of that.
