I've eaten fried chicken across the US, and will say that the quality at places like KFC and Roscoe's Chicken and Waffles in LA is inferior to say, Harold's Chicken Shack in Chicago, or even the fried chicken at Macy's food court on Magnificent Mile (the ex-Marshall Fields?).
There's a stereotype that fried chicken is better in the South, but from experience, I think the quality varies greatly from place to place. Some are great, others are as bad as KFC in LA. The quality is less consistent than White Castle sliders.
In TW chicken breast meat is cheaper because customers dislike the dry meat. I used to be engaged to a girl in TW and, in her infinite wisdom she decided to take me to Maokung for tea and order kung pao chicken because she thought that being "Americanized" I'd prefer to eat such dishes. The cook was some college kid working at night and, the kung pao chicken was made with dried chicken breast meat and charred with bits of unidentified black things.
